Application of Compound Phosphates in Meat Products

The use of composite phosphates in meat products is far more than just a simple physical mixture of several phosphates.

It is a scientific compound technology based on the principle of "synergistic efficiency". The purpose is to achieve the effect of "1+1>2" by accurately combining phosphate monomers with different characteristics, in order to comprehensively solve multiple problems such as water retention, color protection, and texture that cannot be balanced by a single phosphate.


🧪  Core monomer and its function

To understand compounding, it is first necessary to understand the "personalities" of several of the most commonly used phosphate monomers:


Sodium Tripolyphosphate (STPP): "All rounder". Good solubility, balanced ability to retain water, increase elasticity, and protect color, widely used as a base for compounding.


Sodium pyrophosphate (TSPP): "Master of Tendering". The ability to dissociate muscle protein is the strongest, with outstanding water retention and softening effects. But the solubility is poor, and using it alone may darken the color of the meat.


Sodium hexametaphosphate (SHMP): the "best adjuvant". Its own water retention ability is weak, but it can strongly chelate metal ions, prevent the crystallization of other phosphates, eliminate astringency, and stabilize meat color.


Sodium dihydrogen phosphate (DSP): "pH stabilizer". Used as a buffering agent to stabilize the pH value of the system, soften the taste, and reduce astringency.


Sodium dihydrogen phosphate (MSP): "acid-base regulator". Used to reduce the alkalinity of the complex system and avoid excessive alkaline taste or blackening of the meat color in the product.
